Peanuts are rich in vitamin E, healthy fats that actually reduce cholesterol, and one single handful of them has about 7g of protein (which is a little more than an egg!).
What better way to enjoy COCONUT Peanut Butter than covered in chocolate!!
All You Need:
1 jar Coconut Peanut Butter Spread
2 1/2 c melted 42% cacao chips or semisweet chocolate chips
1/2 c coconut flakes
Microwave 1 c chocolate chips for 1 minute high power, stir until creamy. (Or follow melting instructions on bag)
Line a cupcake tin with cupcake liners. Spread 1 tbsp of melted chocolate in the bottom of each, tracing with the back of a spoon up to the sides to create a chocolate cup.
Freeze for 10 minutes.
Melt the remainder of the (1 1/2 c) chocolate chips.
Spread a dollop of peanut butter in each chocolate cup. Sprinkle coconut flakes on the top and mash into the PB.
Evenly spread the rest of the melted chocolate on top.
Freeze 10 mins, crack open, and enjoy!
