Pork Tenderloin with Jalapeno Cranberry Sauce

Ingredients:
3-5 lbs (2 large) Pork Tenderloins
Salt and Pepper to taste
Olive Oil (just enough for light rub over pork)
1/2 cup mixture of equal parks onion powder, garlic powder, cinnamon

Directions:
Preheat oven to 450 degrees. Line a roasting pan with heavy aluminum foil or generously oil pan so meat does not stick to pan or burn. Generously salt, pepper, and rub spice mixture into the tenderloins. Rub tenderloins with a light rub of olive oil to seal in spice mixture.
Place tenderloins in the roasting pan approximately 1 1/2 inches apart and roast until the meat thermometer registers 155/160 degrees (about 15-20 minutes). You may choose to BBQ pork on the grill. Cooking directions are the same over medium heat. Once cooked, slice tenderloins diagonally into 1/2 inch medallions and serve with healthy dollop of jalapeno cranberry sauce covering the top of the medallions.
