1 Whole raw chicken with the skin on
4 tbsp Sierra Seasoning Rub
2 tbsp butter
2 tbsp Olive Oil
Preheat Oven to 400. Remove gizzards from chicken and pat dry with a paper towel.
Place the bird in a large baking pan back side down. Drizzle with Olive Oil and rub all over with Sierra Seasoning rub.
Slice the lemon in half and stuff into the cavity of the bird. Roast in the oven at 400 for 60 minutes.
Once the bird has been roasting for an hour pull it out and takes the internal temperature. Top the breasts with butter and roast for an additional few minutes until the butter is melted and the internal cooking temperature reads 165 degrees.
Allow to cool for about 10 minutes. Carve and Serve.
