Sierra Seasoning's Not Game-y Roasted Rack of Lamb

Lamb is something most people either love or hate. Most often times, the haters say they don't care for the game-y flavor of the meat. We have solved this problem! This marinade is so easy, and extracts the game flavor right out of the meat with just a few simple ingredients: soy sauce, Dijon mustard, and of course Sierra Seasoning Rub. 

This recipe is a great basic, and can be modified in order to create a more Asian, Italian, or Mexican vibe. Adding fresh minced ginger for a more Asian flare, Italian flat leaf parsley & fresh oregano for an Italian flare, and lastly, Harissa paste (we recommend Trader Joe's) for a more Mexican flare. 


Serves 3

  • 1 lamb rack
  • 1/2 cup soy sauce
  • 1/4 cup Dijon mustard 
  • 3 cloves garlic minced
  • 2- 3 tbsp Sierra Seasoning
  • 1- 2 springs fresh rosemary minced (optional)


Make the marinade. Combine soy sauce, mustard, garlic, and seasoning into a small bowl and whisk together. Place the lamb rack bone side up into a large oven safe dish and pour the marinade atop the meat. Cover and refrigerate for at least 30 minutes and up to 24 hours.
    Roast the lamb. Preheat oven to 450. Pull the meat out of the refrigerator while oven preheats, and uncover. Roast lamb in the marinade for about 20 minutes. Internal temp should read 145 for medium rare.
      Rest the meat for about 5 minutes after its out of the oven. Slice into lamb lollipops and serve with a side of your favorite roasted veggies, potatoes, or polenta.
